V'urkey Sandwich Seitan

This recipe is for 5 people and takes 1u20 prep time and 1 nights rest.
You will need an oven hot enough to summon this seitanic deliciousness. 😈 


Ingredients

V'urkey "Brisket"

  • 1 blok of tofu
  • 128 gr VWG (Vital Wheat Gluten)
  • 118-177 ml water
  • 50 gr noosh (nutritional yeast)
  • 1 tablespoon no-chicken bouillon
  • 2 tablespoons chicken seasoning
  • 2 tablespoons maizena
  • 2 tablespoons vegetable oil
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon sage (salie)
  • 1 teaspoon rosemary
  • optional: 
  • 1 teaspoon mosterd
  • 2 teaspoons liquid smoke

Coating

  • 3 tablespoons seasoning of choice for coating (for example chilli-lime)

INSTRUCTIONS


Vurkey "Brisket"

  • Mix the tofu in a food processor (2 min)
  • Mix in all the other ingredients: 

+ 128 gr VWG (Vital Wheat Gluten)

+ 118-177 ml water

+ 50 gr noosh (nutritional yeast)

+ 1 tablespoon no-chicken bouillon

+ 2 tablespoons chicken seasoning

+ 2 tablespoons maizena

+ 2 tablespoons vegetable oil

+ 2 teaspoons onion powder

+ 2 teaspoons garlic powder

+ 1/2 teaspoon sage

+ 1 teaspoon rosemary

+ optional: 1 teaspoon mosterd, 2 teaspoons liquid smoke

  • Take it out the food processor when it starts to form a dough, kneed the dough a little more with your hands for a minute or two


Coating and Backing

  • Take a piece of tin foil that's big enough to wrap your "brisket", cover it with a bit of oil
  • Make your coating of choosing and coat the whole brisket with it
  • This can be a mixture of any seasonings and water, lime or vegetable oil
  • for example: chilli-lime / bami-oil / garam massala-oil
  • mix it up!
  • Wrap the brisket inside the tinfoil
  • Put it in the oven for 30 minutes on 180'C

  • Then open the tin foil and put it in for another 30 minutes

  • Let the brisket cool down, close up the tin foil and let it rest in the fridge for a night

The Morning After

  • The next day you can open it up and cut the brisket into slices
  • You can store your brisket for max 10 days in a closed container
  • PRO TIP: If the brisket is too bread-like (meaning it has air-holes inside), put your oven at a lower temperature next time!
