Mushroom Pita

Get your taste buds ready for a flavor-packed adventure with our marinated mushroom pita! 

Loaded with fresh veggies, fluffy pita bread, and our homemade sauces, this dish is a feast for the senses. 🥙🌱

This recipe is for 6 people or 10 to 12 pita breads.


Ingredients

Mushroom Pita

  • 800gr white mushrooms (champignons)
  • 150gr oyster mushroom (oesterzwam)
  • 3,5 teaspoons cinnamon (kaneel)
  • 1 teaspoon + 1/4 teaspoon nutmeg (muskaatnoot)
  • 1/8 teaspoon cloves (kruidnagel)
  • 1/8 teaspoon ginger (gember)
  • 1/8 teaspoon fennel (venkel)
  • 3 teaspoons cumin (komijn)
  • 4 teaspoons paprika powder
  • 1 teaspoon kurkuma
  • 1 teaspoon pepper
  • 4 cloves of garlic
  • 6 tablespoons (olive) oil
  • 6 tablespoons agave syrup
  • 4 tablespoons lemon juice
  • 2 tablespoons soy sauce

Sides

  • 1/4 red cabbage
  • 1/4 white cabbage
  • 2 carrots
  • 1 lettuce
  • 2 red onions
  • pita bread

Sauces

  • veganaise
  • For garlic sauce add: 

+  Garlic cloves

+  Curry

+  Parsley

+  Pepper

  • For curry sauce add: 

+  Curry

+  Cumeric (Kurkuma)

+  Pepper

+  Parsley

+  Ginger

+  Garlic

  • For a hot sriracha sauce add: 

+ Sriracha


INSTRUCTIONS


Mushroom Prep

  • Pull apart the oyster mushrooms (use the structure they have to make it resemble non-vegan pita)
  • Cut the white mushrooms in long strips
  • Put them in a bowl together with the marinade ingredients: 

+ 3,5 teaspoons cinnamon (kaneel)

+ 1 teaspoon + 1/4 teaspoon nutmeg (muskaatnoot)

+ 1/8 teaspoon cloves (kruidnagel)

+ 1/8 teaspoon ginger (gember)

+ 1/8 teaspoon fennel (venkel)

+ 3 teaspoons cumin (komijn)

+ 4 teaspoons paprika powder

+ 1 teaspoon kurkuma

+ 1 teaspoon pepper

+ 4 cloves of garlic

+ 6 tablespoons (olive) oil

+ 6 tablespoons agave syrup

+ 4 tablespoons lemon juice

+ 2 tablespoons soy sauce

  • Mix together and set aside for 30 minutes to soak in all of the flavours


Pita filling prep

  • Grate the 1/4 red and 1/4 white cabbage (or cut into thin strips)
  • Wash and cut the lettuce into thin strips
  • Peel the two carrots and use the peeler to cut the carrots into thin slices
  • Clean the two red onions, cut them in half circles
  • Make a cut in each pita bread to fill up later


Sauce prep

  • Add the flavours of your choice to veganaise
  • For garlic sauce add: 🧄
  • + Garlic cloves, curry, parsley and pepper

  • For curry sauce add: 
  • + Curry, cumeric, pepper, parsley, ginger and garlic

  • For a 🌶️ hot sriracha sauce add: 

    + Sriracha 🔥🥵

  • Taste test it, until you are satisfied with the result! 🥄


Baking the shrooms

  • Heat up your pan
  • Add a little bit of oil
  • Bake the shrooms on a medium heat
    --> the mushrooms will lose a lot of moisture during this step, just keep stirring and baking until it's gone 😃


Serve with love

  • Heat up the pita bread in the toaster of oven
  • Fill up your pita and enjoy! 💚
