Red Lentil Dahl With Garlic Naan And Rice

Can't go wrong with a lentil dahl! 

..and to top it off it's even better with some delicious garlic naan! 🧄🌱

This recipe is for 6 servings


Ingredients

Red Lentil Dahl

  • 1 onion
  • 1 eggplant
  • 250 gr lentils
  • 2 cloves of garlic
  • 500 ml passata or chopped tomatoes
  • 500ml coconut milk (we use a substitute for coconut milk, like soymilk, to be sure to avoid harm to monkeys)
  • 1 vegetable stock
  • 1 cm fresh ginger
  • 3 teaspoons cumeric (kurkuma)
  • 3 teaspoons garam masala
  • 3 teaspoons cumin
  • peper
  • vegetable oil (olive)
  • optional: 

+  piment

+  fresh coriander

+  chilli flakes

Naan Bread (6)

  • 260 gr / 2 cups flour
  • 1 teaspoon dry instant yeast
  • 1 teaspoon backing powder
  • 1 teaspoon sugar
  • 90 ml / 1/3 cup plant milk
  • 30 ml / 1/8 cup water
  • 60gr / 1/4 cup soy yog(hurt)
  • optional: salt
  • vegetable oil (olive)

Garlic Butter

  • 60 gr plant based butter
  • 4 cloves of garlic
  • fresh parsil 
  • 2 teaspoon garlic powder

Rice

  • 400 gr rice
  • 2 teaspoons cumeric
  • 0.5 vegetable stock
  • vegetable oil
  • water

INSTRUCTIONS


Dough prep

  • Put all the ingredients into one bowl (dry ingredients first)

260 gr / 2 cups flour

1 teaspoon dry instant yeast

1 teaspoon backing powder

+  1 teaspoon sugar

+  90 ml / 1/3 cup plant milk

+  30 ml / 1/8 cup water

+  60gr / 1/4 cup soy yog(hurt)

+  optional: salt

  • Kneed the dough for 5-10 min
  • Let it rest for 1 hour with a clean towel on top
    (best at room temperature or slightly warm)


Dahl

While waiting for the dough to rise, you can already start preparing the dahl. This way you can take your time and really let all the flavours soak in.

  • Prep: 
  • Cut the onion, 2 cloves of garlic, 1 cm of ginger and the eggplant
  • Heat up a large pan or wok
  • Add some (olive) oil
  • Bake the onion
  • Then add the garlic, ginger and other seasonings: 
  • +  1 vegetable stock

    +  3 teaspoons cumeric (kurkuma)

    +  3 teaspoons garam masala

    +  3 teaspoons cumin

    +  peper

    optional: piment

  • Let the seasonings bake into the onion
  • Then add the eggplant, 250 gr lentils, 500 ml passata and 500ml plant milk
  • Let it simmer and don't forget to stir regularly


Garlic Butter 🧄

While the Dahl is bubbling and the dough is almost done resting, you can start preparing the butter.

  • First cut up 4 cloves of garlic and fresh parsley
  • Use a small pan (a sauce pan if you will) to melt 60 gr of plant based butter
  • Mix the garlic and parsley in with the butter


Rice

  • Boil some water to cook the rice in
  • Add 400 gr rice, a bit of vegetable oil, 2 teaspoons of cumeric and 0.5 vegetable stock
  • Boil until ready
  • Drain

Naan

Now that the dough is well rested we can start preparing this delicious piece of bready goodness.

  • Cut that dough into 6 pieces
  • Flaten each piece on a floured surface
  • Fry in a pan with (olive) oil
  • Spread the garlic butter over the dough with a brush, before flipping the dough over
  • Flip when bubbles appear and also add some garlic butter to the other side

    For extra flavour add some
  • + cut up fresh coriander
